The invention discloses a stepless gas volume adjustment system which comprises a compressor, a stepless gas volume adjustment mechanism, a first controller and a second controller. The compressor includes a crankshaft, a first cylinder and a second cylinder. The first cylinder and the second cylinder are internally provided with a plurality of pressure sensors and temperature sensors. The pressure sensors and the temperature sensors are arranged in the cylinders and at outlets and inlets of the cylinders and are used for detecting the oil temperature and the oil pressure of the cylinders. After the oil temperature and the oil pressure change, opening and closing of a solenoid valve are adjusted, and the gas volume adjustment accuracy is improved. The invention also discloses a stepless gas volume adjustment method.
