The invention discloses a method for processing candied wampee. The candied wampee is prepared by taking wampee as a raw material, and is processed by the following steps: material preparation, colorprotection, brittleness-keeping hardening, pre-boiling, vacuum sugar infiltration, drying, packaging, and inspection. The method pre-boils the wampee by using brine, removes part of water in the wampee, makes the tissue tight, and changes the permeability of the cell so as to help the sugar infiltrate into the candied wampee. The brittleness-keeping hardening and the color protection are adopted,so that the candied wampee is unique in flavor, delicious in taste and stable in color. The vacuum sugar infiltration can help the sugar to enter wampee slices to a maximum extent and improve the taste of the candied wampee, and the candied wampee has the effects of relieving cough and removing phlegm.
