The invention discloses a bee pollen rapid ageing wine. The bee pollen wine in the prior art has the disadvantages that in the distillation process of the bee pollen, enzyme in the bee pollen is deactivated due to high temperature and the effect of the bee pollen cannot be exerted completely. The bee pollen rapid ageing wine is prepared from the following components: 10 to 20 percent of bee pollenand 80 to 90 percent of brewing wine. The bee pollen rapid ageing wine is prepared by the steps of preparing materials, removing honey from the bee pollen, soaking in wine and stirring, performing electrophoresis, freezing and filtering. Energy is basically not consumed, the whole process is completed under a cold state, the enzyme in the bee pollen is not subjected to high temperature deactivation, and all the bee pollen is utilized by a user. The whole process avoids three wastes and is very environment-friendly. The quality of the mellowing wine is equal to that of the aging wine which isstored for several tens of years, even some indexes and taste exceed those of the aging wine, and the prices of the bee pollen rapid ageing wine is only one tenth or a few one-tenth of that of the aging wine.
