The invention discloses fat containing high-protein acidified milk and a production method of the acidified milk. The production method comprises the following steps of: (1) preheating, mixing, re-preheating, homogenizing, sterilizing and cooling standardized skimmed milk to form standardized mixed milk with a protein content of greater than or equal to 2.9% and a fat content of greater than or equal to 0.2%, (2) concentrating demulsified acidified milk to form the fat containing high-protein acidified milk with the protein content of 6.0-12.0% and the fat content of 0.5-12.0%, (4) performingsmoothing, (5) performing cooling, and (6) performing filling. According to the production method, on-line watery cream addition equipment is not required to be invested additionally; the equipment cost is lowered; and at the same time, the obtained product is better in delicateness and water retention.
