The invention provides a production technology of a purple sweet potato extracting solution containing rich anthocyanin. The production technology comprises the following steps: step (1): immersing and washing purple sweet potatoes; step (2): carrying out sterilization, enzyme inactivation, curing, crushing, color fixing and pulping on the washed purple sweet potatoes in sequence; step (3): liquefying purple sweet potato pulp; step (4): adding a compound enzyme into the liquefied pulp to obtain a purple sweet potato anthocyanin solution; step (5): filtering and concentrating the purple sweet potato anthocyanin solution to obtain the purple sweet potato extracting solution containing the rich anthocyanin. By adopting the production technology provided by the invention, the defects in an existing technology are overcome and pollution-free comprehensive utilization is realized; the purple sweet potato extracting solution containing rich anthocyanin and phenol effective components is produced; the purple sweet potato anthocyanin and other nutrient components are improved and enriched; the purple sweet potato extracting solution with a natural flavor and natural cyclamate is obtained.
