The invention provides a durian crisp roll and a preparation method thereof. The durian crisp roll comprises a crust material and a core material, wherein the crust material comprises the following components in parts by weight: 50-100 parts of flour, 30-50 parts of durian powder, 15-20 parts of lily powder, 12-20 parts of lotus seed powder, 10-15 parts of salt, 20-30 parts of white granulated sugar, 50-80 parts of water, 0.05-0.1 part of konjac glucomannan, 0.05-0.1 part of xanthan gum and 0.05-0.1 part of trisodium phosphate, and the core material comprises the following components in partsby weight: 20-50 parts of durian powder, 10-30 parts of coconut powder, 15-20 parts of white sesame powder, 5-10 parts of dioscorea opposita powder, 15-28 parts of cream and 20-25 parts of milk. By formulation of the components and the preparation method, the product has mellow and crisp mouthfeel, is not greasy and is easy to store.
