本发明公开了一种胡萝卜米线及其制备方法，所述胡萝卜米线的原料按重量份包括：小米粉120-150份、胡萝卜粉25-35份、玉米淀粉20-30份、谷朊粉10-18份、食盐0.4-0.6份、L-谷氨酸钠0.2-0.4份、5′-肌苷酸二钠0.1-0.3份。本发明提出了一种胡萝卜米线及其制备方法，制备过程简单，得到的胡萝卜米线营养丰富，咀嚼性好，耐蒸煮，不易糊汤，口感好，易引发人们的食欲。

The invention discloses carrot rice noodles and a preparation method thereof. The carrot rice noodles comprise the following raw materials in parts by weight: 120-150 parts of millet powder, 25-35 parts of carrot powder, 20-30 parts of corn starch, 10-18 parts of vital wheat gluten, 0.4-0.6 part of salt, 0.2-0.4 part of L-monosodium glutamate, and 0.1-0.3 part of disodium 5'-guanylate. The invention provides the carrot rice noodles and the preparation method thereof. A preparation process is simple, and obtained carrot rice noodles are rich in nutrients, good in chewiness, boiling-resistant, steaming-resistant, not easy to causing viscous soup, good in taste, and easy to initiating appetite of people.
