The invention discloses a production method of slurry-coated fillets. The production method comprises the following steps: preparing raw materials; slicing the raw materials to form fillets; performing semi-finished product detection on the fillets; performing preparation before slurry coating on the fillets passing the detection; coating slurry and flour on the fillets; pre-frying the fillets coated with the slurry and the flour; performing finished product detection on the pre-fried fillets; performing package and cold storage on the fillets passing finished product inspection. The production method disclosed by the invention solves the problem that the fillets are easy to oxidize during production in the prior art, reduces the loss of water and protein of the fillets, keeps the freshness of fresh aquatic products, and increases the quality and mouthfeel of foods.
