The invention discloses a production process for spiced dried bean curd. The product is composed of the following raw materials by weight: 120-150 parts of dried bean curd, 7-12 parts of salt, 7-12 parts of soy sauce, 5-12 parts of vinegar, 4-8 parts of sesame oil, 2-6 parts of star anise, 3-8 parts of fennel, and 5-10 parts of dried chili. The making steps include: 1. cutting dried bean curd into blocks, performing washing, then pouring the dried bean curd blocks into an oil pan, and performing frying to golden yellow, and then getting the substances out for airing; 2. getting the fried dried bean curd out, pouring the fried dried bean curd into a pan again, then adding salt, soy sauce, vinegar, sesame oil, star anise, fennel, and dried chili, and performing stir-frying, then pouring water and conducting boiling for 30-60min, conducting simmering over moderate heat, and thickening the juice with big fire; and 3. getting out the dried bean curd, and performing airing immediately, then conducting sealing with plastic packing. The spiced dried bean curd made by the process provided by the invention does not contain synthetic fragrance or synthetic pigment, has no harm to human health, is good in aroma and taste, has excellent taste, so that people can eat with reassurance. Therefore, the spiced dried bean curd can be essential leisure food suitable for people of all ages in daily life.
