The invention discloses a method for squeezing pomegranate juice under cryogenic vacuum gas protection. The method for squeezing the pomegranate juice under the cryogenic vacuum gas protection comprises nitrogen-spraying fruit pre-cooling and nitrogen-spraying protecting facilities, a frozen squeezer and a colloid pump, a cryogenic centrifugal liquid and residue separator, a semiconductor cryogenic liquid-nitrogen cold material tank, a cryogenic nitrogen displacer, a vacuum pump, a micro quantitative pump, and a bacterium filter membrane; and the method for squeezing the pomegranate juice under the cryogenic vacuum gas protection is used for preparing pomegranate juice with high activity. Compared with prior art, the method solves the difficulty of oxidative browning during the squeezing process of the juice; moreover, the disadvantages of conventional juice squeezing technologies, namely unavailability to protect the juice from oxidation and unavailability to make the juice clarified, are avoided. The method is capable of isolating oxygen exposure so as to realize processing under protection of inert gas; moreover, the method is high in degree of automation, sanitary, and convenient to control. The method protects enzyme activities and functional components of juice products to the maximum extent; moreover, the device design of the method very well solves processing difficulties of the field.
