The invention discloses a method for producing crystalline inositol and belongs to the technical field of corn deep-processing. The method comprises the following steps: taking corn soaked in water as a raw material, extracting phytic acid with a resin adsorption method, eluting by hydrochloric acid, adding calcium hydroxide for neutralizing, producing phytine, subjecting phytine to a hydrolysis reaction and a neutralization reaction, and performing filtration, evaporation and concentration to obtain concentrated cream; growing the grain of the crude product, crystallizing, and centrifuging the crude product to obtain a crude inositol product; dissolving the crude inositol product, performing sand filtration and secondary crystallization, growing the grain of the refined product, crystallizing, centrifuging the refined product so as to obtain the refined inositol product; finally, performing negative pressure vacuum drying, thereby obtaining the finished inositol. The process for producing high-purity inositol by adopting the method disclosed by the invention is scientific and reasonable, the effects of growing the grain, controlling the crystal size and improving the inositol purity are achieved, and the quality and yield of the finished inositol are effectively improved. The content of the inositol produced by the method disclosed by the invention is 99% or higher, the inositol yield is greatly improved, the operating cost is reduced, and the economic benefits are improved.
