The invention provides an extraction preparation method of strawberry red pigment. The extraction preparation method comprises following steps: 1, pretreatment; 2, ultrasonic extraction; 3, ultrafiltration; 4, macroporous resin adsorption; 5, and drying. The beneficial effects are that: pectase and cellulase are used for enzymatic hydrolysis so as to release the strawberry red pigment, and ultrasonic extraction technology is adopted to extract the strawberry red pigment, so that the extraction preparation method is capable of saving energy, and is friendly to the environment, extraction operation is convenient, extraction time is short, extraction rate is high, and the color value of an obtained extraction product is high; impurities with a molecular weight larger than 6 to 9kDa and smaller than 0.6 to 1.2kDa and can be dissolved in edible alcohol can be removed via ultrafiltration; after macroporous resin adsorption, the strawberry red pigment is separated from the impurities with a molecular weight close to that of the strawberry red pigment, and is obtained via further purification. The purity of the obtained strawberry red pigment is high, the color value is high, no solvent is left, the extraction preparation method is safe and green, the strawberry red pigment possesses high nutritional value and health care effect, and the added economic value of strawberry is increased.
