The invention discloses a konjac dietary fiber and tartary buckwheat containing cake and a processing process thereof. The cake is made from wheat flour, tartary buckwheat flour, a konjac-based material, xylitol, vegetable oil, peanut kernels, walnut kernels, sunflower kernels, sesames and purified water. The konjac and the tartary buckwheat which are used as main materials are rich in content of seven nutrients and have remarkable nutritional healthcare values and extraordinary dietary therapy efficacies. By matching of various celluloses, the cake is nutritional, healthy, crispy, soft and delicious, and high requirements of modern people on diet health as well as market demands are both met.
