The invention provides a control method and device of a jasmine heat treatment process. Stable control of process parameters in the jasmine heat treatment process can be achieved. The control of the jasmine heat treatment process comprises the following steps that (A) temperature control is performed: the temperature in a tank is controlled by adjusting the steam inlet amount of a jacket of the heat treatment tank and is monitored, and acid is added to the heat treatment tank to regulate a pH value when the temperature in the tank is above 95 DEG C; (B) pH control is performed: the pH value in the heat treatment tank is monitored, and when the pH value in the tank is close to a set value, the acid adding speed is reduced to make the pH value not exceed the set value; (C) foam control is performed: the foam height in the heat treatment tank is monitored, and when the foam height reaches the set height, the steam inlet amount of the jacket of the heat treatment tank is decreased, meanwhile the pressure value in the heat treatment tank is detected, and if the pressure value is not an ordinary pressure value, steam input is stopped, and the steam in the jacket of the heat treatment tank is emptied; when the pressure value is an ordinary pressure value, steam input continues after foams are removed.
