The extracting method comprises the following steps: the step 1 of collecting fresh petals; the step 2 of drying process: removing sundries, fixing for 30s through a microwave oven, then air drying in a constant temperature of 40-60 DEG C for 3-5 days to a constant weight and arranging in a drying room for standby application; the step 3 of weighing 1.0g of dry petals obtained in the step 2, arranging the dry petals in an iodine flask, adding an extracting solvent into the iodine flask and processing the iodine flask by ultrasound in an ultrasonic cleaner for 8min-12min in the condition of a constant temperature of 30-50 DEG C; the step of taking out the iodine flask after finishing experiment of the step 3, arranging the iodine flask in a water bath kettle, standing for 4-6h in a situation of a constant temperature of 40 DEG C and performing suction filtration before cooling; the step 5 of extracting filtrate through an extracting agent 2-4 times to obtain a peach blossom red pigment solution after the filtrate cools to a room temperature. The peach blossom is easy to obtain, the pigment extracting technique is simple and convenient, and the pigment is bright in color, good in thermal stability, oxidative resistance and suitable for food, drinks, cosmetics and other chemical products.
