The stirring type low temperature vacuum dewatering desiccation equipment comprises a material cavity. A stirring system comprises a hollow stirring shaft arranged in the material cavity. One end of the hollow stirring shaft is connected with a motor. The hollow stirring shaft is provided with a plurality of stirring blades. The material cavity is a shell body. The shell body comprises an inner shell and an outer shell. An outer heating cavity is formed between the inner shell and the outer shell. A heating cycle system comprises heating equipment. The heating equipment is communicated with the inner cavity of the hollow stirring shaft through a shaft part heat transfer pipeline. The heating equipment is communicated with the outer heating cavity through a cavity heat transfer pipeline. A vacuumizing system comprises a vacuum pump. The vacuum pump is communicated with the material cavity. According to the stirring type low temperature vacuum dewatering desiccation equipment and the process thereof, material with a high water content is stirred and heated simultaneously, so that water in the material is evaporated. According to the vacuum pump, not only can the material cavity be vacuumized, is the boiling point of the water lowered, and is evaporation of the water in the material accelerated, but also water vapor can be extracted from the material cavity.
