The invention discloses a method for simultaneously preparing aucubin and soluble dietary fibers in eucommia meal, relating to the technical field of plant extraction. The method comprises the following steps: grinding eucommia meal, mixing, sterilizing, cooling, inoculating, performing fermentation culture, drying, extracting, concentrating, drying, thereby obtaining the aucubin and soluble dietary fibers. The method disclosed by the invention has the advantages of high yield and low cost, the aucubin and soluble dietary fibers are simultaneously prepared from the eucommia meal, and the product is high in purity and high in activity and can be widely applied to functional foods.
