The present invention relates to unhulled rice in which resveratrol synthase is expressibly inserted into a twelfth chromosome of natural unhulled rice so as to biosynthesize a high concentration of resveratrol, and rice produced from the unhulled rice. Also, the present invention relates to a health functional food composition, composition for animal feed, and a pharmaceutical composition, for preventing and reducing metabolic disease, said compositions including rice obtained from unhulled rice in which resveratrol synthase is expressibly inserted into a twelfth chromosome of natural unhulled rice to biosynthesize high-concentration resveratrol. The rice produced from unhulled rice containing a high concentration of resveratrol into which resveratrol synthase is inserted exhibits excellent effects compared to the case of simply ingesting the same amount of resveratrol. Furthermore, since resveratrol is produced in the form of rice which can be directly used for food without isolation and extraction, the resveratrol can be widely used for food, feed, and medical supplies, and for preventing and improving metabolic disease.
