The invention belongs to the technical field of processing of aquatic products and particularly discloses a making method of a frozen minced squid fillet. By using the property that the protein of the squid fillet muscles is precipitated at an isoelectric point, the making method comprises the following steps: pulping squid muscles, then dissolving protein with water as a solvent to separate insoluble impurities and adjusting the isoelectric point to precipitate the protein, filtering to obtain a protein solid, adding a protein denaturation resistance agent and other components to uniformly mix, and quick-freezing to obtain the frozen minced squid fillet. The making method of the frozen minced squid fillet disclosed by the invention is low in manufacturing method, high in yield, large in elasticity and capable of realizing mechanical production.
