The invention discloses a perforating machine for refrigerated berries and a production process of dried berries. The perforating machine comprises a belt conveyor and is characterized in that a base plate is provided with considerable arc bumps, a pore plate is in fixed connection with a slide bar and is perforated with considerable penetrated small holes, a nail plate is arranged above the pore plate and slidably sleeved and arranged on the slide bar through a sliding sleeve, the nail plate is provided with considerable barbed nails capable of passing through the small holes, an upper support is in fixed connection with the slide bar, and the nail plate is connected with a power-driven eccentric wheel through a connecting rod. The perforating machine provided by the invention has the advantages of a simple structure, uniform perforation, applicability to berries with different diameters, easy realization of mechanized operation, a fast freeze-drying and dehydration speed and capacity of obtaining an intact fruit shape; and compared with traditional manual perforation, the perforating machine provided by the invention enables labor force to be substantially saved.
