The invention discloses an extraction method of gardenia yellow pigment, comprising the steps of: (A) crushing peeled gardenia to obtain gardenia particles, adding water to the gardenia particles and leaching the gardenia particles to obtain leachate; (2) carrying out solid-liquid separation on the leachate to obtain supernatant, and carrying out microfiltration on the supernatant to obtain first filtrate; (C) adsorbing gardenia yellow pigment in the first filtrate utilizing resin, and eluting the resin to obtain eluate; and (D) carrying out ultrafiltration on the eluate to obtain second filtrate, and finally drying the second filtrate to obtain gardenia yellow pigment. By utilizing the extraction method disclosed by the embodiment of the invention, gardenia yellow pigment with high color number, high purity, high quality and long storage life can be obtained; and the obtained gardenia yellow pigment does not turn into green or grey after long-term storage.
