The invention relates to a lactobacillus plantarum bacterial strain with the collection number of CGMCC No.3167. The bacterial strain can be gathered in an improved MRS liquid culture medium, is white on the MRS agar culture medium, straight, short and Gram-negative, is free from flagellum, is in homofermentation, produces no gas when fermenting glucose, produces acetic acid and lactic acid when fermenting ribose and does not reduce nitrite. When being applied, the bacterial strain is activated and performed with culture expansion and thallus collection to form a leaven, which biogenic amine oxidase is generated in fermenting and producing meat products to inhibit amine producing bacteria from growing as well as oxidize and degrade biogenic amine. The lactobacillus plantarum has the advantages of strong growth capability and simple leaven preparation technology; the leaven can effectively inhibit enterobacter from growing and breeding when fermenting and producing meat products so as to control the generation of the biogenic amine; in addition, biogenic amine oxidase produced by the lactobacillus plantarum of the invention can oxidize and degrade cadaverine and putrescine; thus, when serving as a leaven to produce and ferment meat products, the lactobacillus plantarum can effectively reduce accumulation of biogenic amine.
