The invention provides a vacuum freeze-drying apparatus capable of rapid drying. A cold trap for drying 21 disposed in a drying chamber 11 is regulated to a low temperature of -70 DEG C or below, andheat is fed to frozen particles 7 lying on a carrier belt 16 to such a level that the frozen particles 7 are not thawed. Accordingly, the amount of liquid component vaporized from the frozen particles7 would be increased, and the amount of liquid component having entered the frozen particles 7 would be decreased. Thus, the time for drying the frozen particles 7 can be shortened.
