The invention discloses a composite catalyst for oxidative degradation and the application thereof to the preparation of spice with carotenoid. The composite catalyst for oxidative degradation is prepared with an oxidative catalyst and a natural mineral degradation catalyst according to the proportion of 1:99 to 99:1. The oxidative catalyst is one of metal oxides and metal salts or the mixture with arbitrary proportion of more than one of metal oxides and metal salts. The oxidative catalyst can be the mixture with arbitrary proportion of one or two of CaO, MaO, Fe2O3, Al2O3, Na2CO3 and CaCO3. The natural mineral degradation catalyst is the mixture with arbitrary proportion of one or more than one of activated carclazyte, diatomite and kaolin. The application of the composite catalyst for oxidative degradation to the preparation of spice with carotenoid comprises the steps as follows. The carotenoid and the composite catalyst for oxidative degradation with the mass being 0.1% to 10% of carotenoid are added into inert medium and react for 3 to 24 hours under 100 to 200 DEG C to obtain multi-component oxidative degradation product that can be used as spice. The inert medium is silicone oil, methyl-silicone oil, dimethyl silicon oil or phenyl silicone oil.
